Questions about Lyme Disease

I tried searching for previous posts but was unsuccessful. Does anyone have experience treating their Percheron or Perch cross for Lyme? Lunar was recently diagnosed with Lyme and has started on a one month treatment plan with Doxycycline. He was tested as part of an exam trying to figure out back soreness and a return of his crow-hopping which had not been seen in almost 2 years. He had chiropractic adjustments and acupuncture but his blood work came back positive for Lyme so it may be that it had some part in his back soreness.
We are giving him double doses of vitamin E and double doses of probiotics and monitoring his temperature etc. Any other things I should be doing or looking for that might be more specific to our perchie friends?
So far he is bright and happy- he eats his dozens of doxy tablets whole in his food and though his manure is softer there is no real diarrhea from the antibiotics at this time. I did add some electrolytes (with the vets approval) to help encourage him to drink now that it is cooler. He is getting carrot stretches and belly lifts and gentle exercise- no riding til the vet comes out again to access his back again.
Any helpful suggestions will be greatly appreciated.

Update on Lunar.....
He is 3/4 of the way through his antibiotics and cleared to go back to some light walk work under saddle. Seems to be doing better. He had some chiropractic and acupuncture work done along with the antibiotics. Considering some herbal therapy after the antibiotics are completed.
Hopefully this will "kick" the spirochetes out so he doesn't have a relapse.
Any suggestions for other options will be welcomed.
